The dragon fruit plant belongs to the cactus family (Cactaceae) originating from South America, generally eaten by aristocratic families, then spreading throughout the world including Indonesia. Currently, dragon fruit research, including post-harvest, is still small, causing very high losses for farmers. The purpose of writing is to provide information related to post-harvest so that the level of crop loss can be minimized. The research method was carried out through literature studies and field surveys and analyzing secondary data. The results of the paper prove that there is still much further research to be done to maintain the freshness of dragon fruit to consumers in a fresh condition and the quality of the fruit is still good.
