Tanaman Stevia: Potensinya Sebagai Pemanis Alami yang Sehat

Stevia (Stevia rebaudiana Bertoni ) adalah tanaman yang dikenal dengan kandungan steviol glikosida, senyawa pemanis alami rendah kalori. Perkembangannya di Indonesia sudah ada sejak tahun 1977 dan penelitian terkait dengan kebermanfaatannya terus dilakukan. Artikel ini merupakan sebuah tinjauan pustaka (literature review) menggunakan literatur terkini yaitu dalam rentang tahun 2015-2024 yang membahas potensinya sebagai pemanis alami yang sehat meliputi komposisi kimia, manfaat kesehatan, serta tantangan dalam aplikasinya. Berdasarkan review literatur, bahwa tanaman Stevia rebaudiana Bertoni terbukti efektif dalam mendukung pengelolaan diabetes, obesitas, dan hipertensi. Nilai komersial dari aplikasi tanaman ini cukup besar sehingga berpotensi untuk terus dikembangkan. Meskipun demikian, hambatan seperti rasa aftertaste pahit dan variasi hasil ekstraksi menurut penulis akan menemukan solusi dengan semakin berkembangnya teknologi proses yang ada.
